Paprika soup with sausage dumplings

Ingredients for 4 servings:

  • 4 large red bell peppers
  • 1 bunch of soup vegetables
  • 700 g potatoes
  • 1 tbsp oil
  • 200 g processed cheese or sour cream
  • 1 liter vegetable broth
  • salt and pepper
  • oregano
  • 4 pieces of bratwurst, uncooked

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and chop the peppers and soup vegetables, peel and chop the potatoes. Heat the oil in a pan. Press the sausage meat directly from the sausage into the hot oil, frying them all over, and removing them when well browned. Sauté the vegetables and potatoes in the frying fat, add the vegetable stock, and bring to a boil. Season with salt, pepper, and oregano. Cover and simmer for about 15-20 minutes. Remove some of the vegetables and puree the rest. Add the processed cheese (or sour cream) and melt. Add the remaining vegetables and the dumplings back in and let them warm in the soup.
