Parmesan biscuits

Ingredients for 1 servings:

  • 375 g flour
  • 120 g Parmesan, grated
  • 2 tbsp sugar
  • 2 tbsp baking powder
  • 1 tsp salt
  • ½ tsp pepper
  • 120 g butter, soft
  • 225 ml milk
  • 70 g butter, liquid

Preheat the oven to 210°C. Mix the flour, 100g Parmesan cheese, baking powder, sugar, salt, and pepper in a bowl. Sprinkle the butter flakes over the top and knead into the flour mixture with your hands. Pour in the milk and knead into a smooth dough. Place the dough on a floured surface and roll out to about 1.5cm thick. Cut out circles about 5cm in diameter; I use a drinking glass for this. Place on a baking sheet lined with baking paper. Brush with the melted butter and sprinkle with the remaining Parmesan cheese. Bake for about 15-20 minutes on the middle rack using conventional heating, until golden brown. These little rolls are best eaten fresh, often even lukewarm. I find they taste best with savory toppings.
