Ingredients for 4 servings:

  • 4 large waxy potatoes
  • 2 tbsp olive oil
  • 1 tsp basil, dried
  • Salt and pepper, adM
  • 3 slices of toast
  • 3 tbsp Parmesan, grated
  • 3 tbsp water
  • Fat, for the tray

Preheat oven to 200 degrees Celsius, grease a baking sheet with oil, and set aside. Halve the peeled potatoes lengthwise, then cut each half into 1/2 cm thick slices, leaving the two halves together. Using a large spatula, carefully place each potato half on the baking sheet and spread it out into a fan. Mix the olive oil, basil, salt, and pepper together in a cup and spread evenly over the potatoes. Bake in the preheated oven for about 30 minutes. Meanwhile, lightly toast the bread and cut it into small cubes or roughly chop it. Place it in a small bowl and mix well with the Parmesan cheese and water, then pour it over the potatoes as evenly as possible. Bake for another 10-15 minutes. You can also use ready-made croutons (flavored ones are fine). Place them in a freezer bag and crush them.
