Parsnips braised in nut butter

Ingredients for 2 servings:

  • 2 m.-large parsnip(s)
  • 1 tbsp butter
  • salt and pepper
  • 1 dashes lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel the parsnips, quarter them, and cut them into 1 cm thick pieces. Melt the butter in a wide saucepan and slowly simmer until it becomes a nut butter. Allow the butter to foam. Reduce the heat and cook, stirring occasionally, until the butter is golden yellow and the whey has settled at the bottom of the pan. Just be careful not to burn the whey. Don’t let it get too hot and keep stirring. Then add the parsnip pieces and cook over low heat with the lid on for about 10-15 minutes, until softened. Season to taste with salt, pepper, and lemon juice.
