Pasta casserole with tomatoes and mozzarella

Ingredients for 4 servings:

  • 500 g pasta of your choice
  • 400g mozzarella
  • 3 cans tomatoes, chopped
  • 1 onion(s)
  • 2 garlic cloves
  • 1 handful of fresh basil
  • 1 handful of Parmesan, freshly grated
  • salt and pepper
  • olive oil

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat the oven to 200 degrees Celsius (top/bottom heat). For the sauce: Finely chop the onion, press the garlic, and sauté with a little olive oil. Then add the canned tomatoes and simmer gently for about 20 minutes. Pick in the basil and season everything with salt and pepper. Then add the Parmesan cheese. Meanwhile, cook the pasta according to the package instructions for about 8 minutes, then drain. Grease a baking dish with olive oil. Add some of the pasta and cover with some of the sauce. Slice the mozzarella and place about half over the casserole. Now add the other half of the pasta, followed by the second half of the sauce. Finish the casserole with the remaining mozzarella. Place the casserole in the oven for about 20 minutes, until it has a golden brown crust.
