- 250 g Pasta
- 2 Asian garlic bulb
- 0,5 Broccoli
- 4 Handful Arugula
- 0,5 tsp Red chilli flakes
- 1 Lime untreated
- 2 cut resistant! Avocados
- 100 ml White wine dry
- 150 ml Vegetable broth
- 2 Tomatoes
- Olive oil
- Pepper
- Cook the pasta while preparing the remaining ingredients. Depending on the type of pasta, you might have to work a little faster.
- Important: In the last minute, the broccoli should be added to the pasta boiling water. Divide this into small florets beforehand. Rub the lime zest, squeeze the lime.
- Chop the garlic very finely. Sauté with olive oil, lime zest and chilli in a deep pan over medium heat, about 2 minutes. Don’t let it get brown!
- Pour the wine over the garlic and increase the heat. Let the wine boil down for approx. 2-3 minutes. Add the lime juice and stock to the pan, reduce the heat and let it simmer gently.
- Cut avocado and tomatoes into cubes. Add the broccoli to the pasta, let it cook for the last minute and drain.
- Put the rocket in the garlic pan and let it collapse. Then add the pasta with broccoli and cook for another 3 minutes over medium heat. Stir well in between. Pepper.
- Add the avocados and tomatoes and stir in. Heat in the pan and then serve.
