quick and tasty

Bring the salted water to a boil for the pasta. Meanwhile, finely chop the shallot and garlic. Add the pasta to the boiling water and cook according to the package instructions. Melt the butter in a pan. Then lightly sauté the shallot and garlic pieces. Add the tomatoes to the pan. Stir and simmer gently over medium heat. Add the cream cheese and let it melt. Season the sauce with salt, pepper, and oregano (I sometimes add dried basil too). When the pasta is cooked, drain and add it to the pan. Mix with the sauce and serve. Garnish with Parmesan cheese, if desired. Tip: Try different types of cream cheese. It tastes different every time, but is delicious.
