Axel's barley soup

Ingredients for 4 servings:

  • 500 g potatoes, mostly waxy
  • 250 g smoked smoked pork
  • 250 g ribs, thick, smoked or
  • some bacon or ham rind
  • 1 pack of pearl barley, fine or medium
  • 1 bunch of soup vegetables, fresh
  • 2 onions
  • 2 pieces of fresh smoked bratwurst
  • Meat broth
  • Lovage, fresh or shredded
  • Salt
  • pepper

a very rich variant

Place the meat, bacon, and pearl barley in a pot of cold water. Bring to a boil, then simmer for 45-60 minutes. Peel and dice the potatoes. Peel and dice the onions, and cut into rings. Trim, dice, and/or ring the vegetables for the soup. Slice the bratwurst. Fry the bratwurst in a pan for about 10 minutes, add the onions, and finish cooking (the onions shouldn’t get too brown). Once the meat has simmered for about 30 minutes, add the vegetables and potatoes so that everything cooks at the same time. Season to taste with salt, pepper, lovage, and stock. Once cooked, remove the meat and dice it. Remove the rind, chop it up, or serve whole with a knife and fork at the table (this always causes a great stir, but tastes SUPER delicious). Finally, stir the bratwurst and onions into the stew. You can serve it with any kind of roll or bread.
