Ingredients for 2 servings:
- 160 g penne
- salt water
- 250 g peas (frozen)
- 80 g cooked ham
- 150 g crème fraîche
- 3 tbsp milk
- 2 tbsp lemon juice
- 50 g cheese (Grana Padano), sliced
- 4 stalks of basil
- 4 stalks of flat-leaf parsley
- 1 pinch(s) of sugar
- some salt and pepper, colorful from the mill
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the pasta in plenty of boiling salted water until al dente. Just before the end of the cooking time, add the peas and cook. Then drain, reserving 100 ml of the cooking water. Rinse the pasta and peas in ice-cold water and drain well. Rinse the basil and parsley, shake dry, and tear the leaves from the stalks, reserving a few basil leaves for garnishing. Puree both with crème fraîche and milk. Season with a little salt, pepper, a pinch of sugar, and lemon juice. Cut the cooked ham into strips. Mix all the prepared ingredients in a bowl with the dressing and let stand for 10 minutes. Finely chop the reserved basil leaves and sprinkle them over the pasta salad along with the shaved Grana Padano.
