Pasta salad with mandarins

Ingredients for 4 servings:

  • 150 g peas, frozen
  • 2 small cans of tangerine(s)
  • 1 bell pepper(s), red, yellow and green
  • 2 small cans of corn
  • 1 jar mushrooms, sliced
  • 1 jar mayonnaise
  • 250 g pasta
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta according to the instructions, then drain well. Add the frozen peas to the still-warm pasta. Chop the bell peppers into small pieces. Drain the mandarin oranges and reserve the juice, as well as the mushrooms and sweetcorn (the juice doesn’t need to be reserved). Add everything to the bowl with the pasta and peas. Season the mayonnaise with the mandarin orange juice, salt, and pepper, and mix well. P.S. The salad also tastes great with rice instead of pasta!
