Pasta salad without mayonnaise

Ingredients for 2 servings:

  • 200 g pasta (spaghetti)
  • 1 Cabanossi
  • ½ cucumber(s)
  • 15 olives
  • 250 g tomatoes
  • 1 onion(s)
  • 3 tbsp vinegar (herb vinegar)
  • 3 tbsp oil
  • 1 tsp mustard
  • 1 pinch(s) of sugar
  • 1 dashes Tabasco
  • garlic powder
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Make a marinade from vinegar, oil, mustard, sugar, Tabasco, and a little garlic powder. Finely slice the onion and let it marinate for 1 hour. In the meantime, cook the pasta, rinse, and let it cool. Thinly slice and quarter the Cabanossi. Cut the cucumber into 0.5 cm thick slices and quarter them. Quarter the tomatoes, remove the seeds, and cut into strips. Mix all ingredients together. Season with salt and pepper. Tastes best after it has been left to marinate for a day. Great for a summer barbecue or for on the go.
