Pasta with cauliflower and ham

Ingredients for 2 servings:

  • 200 g pasta
  • 400 g cauliflower, fresh or frozen
  • 100 ml milk (1.5%)
  • 1 onion(s)
  • 75 g lean ham cubes
  • 1 clove(s) garlic, optional
  • 50 g Parmesan, sliced

very tasty, low in fat, low in calories, no oil, no cream

Cook the cauliflower florets in a little salted water until tender. I almost never use oil and often just use water. If you like, you can try this or use oil as usual. During the cooking time, slice the onion and sauté it in a covered pan or pot with 2-3 tablespoons of water until soft and translucent. Then add the lean ham cubes and continue sautéing, adding a spoonful of water every now and then if it starts to burn. When the cauliflower is tender, continue cooking the onions and ham cubes uncovered until the liquid has evaporated. Meanwhile, drain the cauliflower, pouring the hot water into another pot and cooking the pasta in it. Puree the cauliflower with the milk, then add the onions and ham. If desired, add a freshly chopped garlic clove. Bring everything to a boil and simmer gently, stirring occasionally, until the pasta is tender. Season with salt (carefully!) and pepper. Drain the pasta and divide it between plates. Pour the cauliflower and ham sauce over it. My husband was skeptical at first, but then he was thrilled!
