Pasta with dried tomatoes and smoked salmon

Ingredients for 1 servings:

  • 50 g smoked salmon
  • 20 g tomato(s), dried
  • 100 g pasta
  • ½ tbsp olive oil
  • ½ garlic clove(s)
  • 125 ml cream or Cremefine
  • 1 tsp lemon juice
  • ½ tsp mustard, medium hot
  • e.g. Parmesan

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the pasta until al dente. Meanwhile, soak the sun-dried tomatoes in boiling water for 5 minutes and roughly chop the smoked salmon. Heat the olive oil in a pan over medium heat and sauté the chopped garlic. Add the cream and mustard, season with salt (not too much, the salmon is quite salty!), and pepper, and reduce the sauce to a simmer. Once the sauce has thickened, remove from the heat and add the salmon pieces. The fish doesn’t need to be cooked; the heat from the sauce is sufficient to cook it. Season with lemon juice. Drain the pasta and mix well with the sauce. Add the sun-dried tomatoes, season again, and top with Parmesan cheese, if desired.
