Pasta with Fried Radicchio
The perfect pasta with fried radicchio recipe with a picture and simple step-by-step instructions.
- 170 g Penne rigate
- 2 teaspoon Salt
- 2 liter Boiling water
- 1 head Radicchio, about 350 g
- 2 tablespoon Walnut oil
- 1 small Fresh onion
- 0,5 Solo garlic
- Black pepper from the mill
- Salt
- Preparation 1: Remove dead leaves from the radicchio, quarter and remove the hard stalk, then cut into narrow strips. Cut the onion into strips and chop the garlic very finely.
- Preparation 2: Cook the pasta in salted water until al dente and drain. While the pasta is cooking, heat the oil for the vegetables in a large pan (I used the wok), sauté the onion and garlic in it and add the radicchio with pepper and salt. Fry very quickly while turning the pan.
- Pour in the pasta immediately after draining and mix everything together. We liked the fine, tart dish … you can serve it sprinkled with grated Parmesan – but we don’t like that very much. As described, it was delicious and right for us!
