Pasta with pistachio pesto and ham

Ingredients for 2 servings:

  • 250 g pasta
  • 1 onion(s)
  • 100 g ham
  • 1 shot of cognac
  • 100 g pistachio pesto or ground pistachios
  • 200 ml cream
  • 1 dash of olive oil
  • e.g. Parmesan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, boil the water for the pasta, as this takes the longest. Cook the pasta according to the package instructions. Dice the onion and sauté it in a little oil until translucent. Meanwhile, dice the ham, add it, and fry for 3 minutes. Add a splash of cognac and let it evaporate. Add the pesto or pistachios, stir, and then add the cream. Let it simmer until the sauce thickens a little. If desired, add a little Parmesan cheese. Once the pasta is ready, toss everything together and serve.
