Pasta with porcini mushrooms

Ingredients for 2 servings:

  • 10 g porcini mushrooms, dried
  • 250 ml cream
  • 250 g spaghetti or tagliatelle pasta
  • Parmesan, freshly grated
  • Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 35 minutes

The simplest, and for me tastiest, recipe in the world!

Cook the pasta al dente as usual. First, roughly chop the porcini mushrooms and soak them in hot water for about 1-2 hours. Save the water afterward, as it retains the mushroom flavor. Then, drain the mushrooms and add them to the cream and place it on the stove. Cook until the cream has reduced by half. Now add a cup of the mushroom water and reduce again. Season everything with salt and pour it over the cooked pasta. Finally, top with freshly grated Parmesan cheese (not pre-grated!). This is a wonderfully simple recipe that has always been a hit with my guests. It’s delicious, but it’s also a big fat burner.
