Pasta with Quick Avocado Sauce

The perfect pasta with quick avocado sauce recipe with a picture and simple step-by-step instructions.

For the sauce

  • 1 Zucchini
  • 300 g Spaghetti
  • 1 Soft avocado
  • 2 Spring onion
  • 1 Clove of garlic
  • 0,5 bunch Flat leaf parsley
  • 2 tbsp Olive oil
  • Parmesan
  • Salt and pepper
  1. Wash tomatoes, cut into quarters or halves depending on size. Wash the zucchini, remove the ends and cut into small pieces. Roughly chop the parsley, peel the garlic and wash the spring onion and cut into large pieces. Peel the avocado and remove the stone.
  2. In a blender, puree the avocado, parsley, onions and olive oil. Cook the spaghetti according to the instructions on the packet. Fry the zucchini and tomatoes in a little oil in a large pan until the zucchini are tender and the tomatoes are crumbling.
  3. Add the hot noodles to the vegetables and mix with the sauce and Parmesan, season with salt and pepper.
