Ingredients for 4 servings:
- 400g pasta
- 120 g sardines in oil
- 60 g olives, black
- 1 organic lemon(s)
- 1 small bunch of parsley
- 2 tbsp pine nuts
- 1 tbsp olive oil
- 1 garlic clove(s)
- salt and pepper
- possibly Parmesan
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Boil approximately 3-4 liters of salted water (1 teaspoon of salt per liter of water). Cook the pasta according to the package instructions. Wash the lemon in hot water, dry it, and finely grate the zest. Squeeze the lemon. Peel and finely chop the garlic. Pit and finely chop the olives. Roast the pine nuts in a large pan without fat and remove them. Heat the oil in the pan. Sauté the garlic. Add the sardines and oil and roughly chop with a spatula. Add the olives, lemon juice, and zest, and season with pepper. Wash the parsley, shake dry, and roughly chop. Drain the pasta, add it to the pan with the parsley and pine nuts, and mix everything well. Season with salt and pepper. Approx. 650 kcal per serving
