super delicious and uncomplicated spaghetti dish in a tomato sauce with pine nuts, sardines and sultanas
At the same time, bring a large pot of water to a boil for the spaghetti and heat a large frying pan on the stove. Meanwhile, finely chop the garlic cloves. Add about 6 tablespoons of olive oil to the pan, heat until hot, and then add the breadcrumbs. Stir frequently until the crumbs turn light brown. Transfer the cooked breadcrumbs to a separate plate. Be careful not to overcook them! Once the water is boiling, add the spaghetti and season lightly with salt. Cook according to the package instructions until al dente. Meanwhile, return the pan to the stovetop and fry the finely chopped garlic in a little oil over medium heat until golden yellow. Then add the sardines in oil, pine nuts, and sultanas. Break up the sardines with a spatula. Fry everything for about 3-4 minutes, stirring frequently to prevent the pine nuts from overcooking. Add the red wine and tomato paste to the pan, stir well, and simmer over low heat for 4-5 minutes. Drain the spaghetti, add it to the pan, and toss it with the sauce until all the ingredients are evenly distributed. Divide among plates and serve with the breadcrumbs as a topping.
