- 50 g butter
- 2 tbsp, heaped flour
- 100 g tomato paste
- 300 g pasta of your choice
- n. B. Water, warm
- 2 tbsp, heaped sugar
- salt and pepper

a quick, uncomplicated and inexpensive pasta dish
First, melt the butter in a saucepan over medium heat and add the flour, then mix to form a roux. Once you have a thick paste, add the tomato paste and mix it with the finished roux until the solid paste is completely red from the tomato paste. This solid, red paste is gradually poured with warm water, stirring constantly (to avoid lumps), until the tomato sauce reaches the desired consistency – ideally, it should be creamy and not too runny. Then add sugar, salt, and pepper. If you like it “more tomatoey” or “sweeter,” you can add more tomato paste, sugar, etc. to taste. Traditionally, ‘sweet’ tomato sauce is served with pasta, although it doesn’t matter whether you use spaghetti, spirelli, or whatever other pasta you have on hand. Cook it al dente according to the package instructions. Tips: By increasing the quantities accordingly, this dish or sauce can be “stretched” to serve as many people as you like. I always calculate about 150g of pasta per person. Instead of adding warm water to the sauce, you can also use the pasta water from the still-cooking pasta, which is actually the norm here. The dish can also be easily reheated the next day.
