Ingredients for 1 servings:

  • 350 g almonds, ground
  • 200 g powdered sugar
  • 2 lemons, zest
  • 2 eggs

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Italian cookies

Makes approximately 16 cookies. Preheat the oven to 180°C and line a baking sheet with baking paper. In a large bowl, mix the ground almonds, powdered sugar, lemon zest, and eggs into a soft, slightly sticky dough. Dust your hands with powdered sugar and take a walnut-sized ball of dough at a time. Roll it gently between your palms. You can also roll it on the work surface as long as everything is dusted with powdered sugar. Place the balls on the baking sheet and make a well in the center. The cookies will crack slightly during baking. Bake for 11-12 minutes for soft, marzipan-like cookies; for firmer, chewier cookies, bake for 14-15 minutes. Place on a wire rack to cool. They will keep for up to one month in an airtight container.
