Peach and pineapple casserole

Ingredients for 1 servings:

  • 825 g peach(s) (halves) from the can
  • 450 g pineapple slices from the can
  • 2 tbsp jam (orange jam)
  • 1 tsp rum
  • 90 g breadcrumbs
  • 2 tbsp flour
  • 30 g desiccated coconut
  • 90 g butter
  • 4 tsp honey

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat the oven to 180°C. Drain the fruit well. Reserve 1/4 l of the juice. Place the fruit in a shallow, ovenproof dish. Heat the fruit juice, jam, and rum over low heat. Bring to a boil, reduce the heat, and simmer uncovered until the liquid thickens to a syrup (approx. 5 mins). Pour over the fruit. For the coating, combine the breadcrumbs, sifted flour, and desiccated coconut. Heat the butter and honey until melted. Stir into the dry ingredients. Spread over the fruit. Bake for 20 mins, until golden brown. Serve warm with custard.
