Peach crumble muffins

Ingredients for 12 servings:

  • 50 g butter
  • 75 g sugar
  • ½ pack of vanilla sugar
  • 2 eggs
  • Salt
  • 125 g flour
  • ½ tsp baking powder
  • 450 g peach(s), steamed
  • 75 g flour
  • 40 g sugar
  • ½ pack of vanilla sugar
  • 50 g butter
  • 50 g powdered sugar
  • 1 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease the muffin tin thoroughly and dust with breadcrumbs or line it with paper baking cups. For the batter, beat the butter until smooth. Gradually stir in the sugar, vanilla sugar, eggs, and salt. Sift the flour with the baking powder, stirring in a tablespoon at a time. Pour the batter into the muffins. For the topping, drain the peaches, slice them, and place them on top of the batter. Sift the flour into a bowl, mix with the sugar and vanilla sugar. Add the butter in small pieces and mix everything with your hands (or two forks) to form crumbles. Spread the crumbles on the peaches. Bake at 170°C (fan-assisted, preheated) for about 15-20 minutes. For the icing, sift the icing sugar and beat it with the lemon juice until smooth and thick. Immediately after baking, drizzle this icing over the muffins (using a brush or teaspoon).
