Peach liqueur

Ingredients for 1 servings:

  • 1 kg peach(s)
  • 1 vanilla pod(s)
  • 1 liter of schnapps (corn or vodka)
  • 500 g brown sugar
  • 4 saffron threads
  • possibly honey or sugar syrup

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pit the peaches with the skin on and chop them into small pieces. Sprinkle with sugar and let steep in a bowl or wide-mouth bottle for about 1 hour. Crush 2 peach stones, place in a tea bag, tie it up, and add to the bottle or bowl. Scrape out the vanilla pod. Add the vanilla seeds and pod to the peaches. Also add the saffron threads. Top up the mixture with the cornstarch or vodka. Let it rest for four weeks in a dark, warm place. After the resting time, strain through a cheesecloth. If the peach liqueur isn’t sweet enough for your taste, sweeten with honey or sugar syrup (bar syrup). Bottle the liqueur and let it rest for another 3 weeks.
