Peach mousse with raspberries

Ingredients for 4 servings:

  • 250 g raspberries
  • 2 cans of peach(s) (425 ml each) (half fruit)
  • 4 tbsp lemon juice
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 250 g whipped cream
  • 1 pack of cream stiffener
  • 25 g pistachios

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Drain the peaches, cut into smaller pieces, and puree with lemon juice, sugar, and vanilla sugar. Whip the cream with the cream stiffener and fold in. Divide half of the raspberries among 4 cocktail or wine glasses. Spoon the peach cream on top. Decorate with the remaining raspberries and pistachios. Chill slightly before serving, if desired.
