Peach Quiche

Ingredients for 12 servings:

  • 175 g flour
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 150 g sugar
  • 5 eggs
  • 2 packets of vanilla sugar
  • 100 g butter
  • 50 g hazelnuts, ground
  • 1,700 ml peach(s) from the can
  • 200 g sour cream
  • 2 packs of ready-made sauce powder mix vanilla flavor
  • 2 tbsp apricot jam
  • 2 tsp powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Knead together flour, baking powder, salt, 75g sugar, 1 egg, 1 packet of vanilla sugar, butter, and nuts. Knead into a smooth dough, cover, and chill for 30 minutes. Drain the peaches. Mix together the remaining eggs, the remaining vanilla sugar, the remaining sugar, the sour cream, and the vanilla sauce powder. Cut the peaches into wedges. Pour the dough into a quiche dish or springform pan and pierce with a fork. Arrange the peaches on top and pour the sour cream over the top. Bake for approx. 50 minutes (E: 200°C, Gas Mark 3). Remove from the oven and let cool. Heat the jam, strain it through a sieve, and spread it over the peaches. Dust the edges of the quiche with powdered sugar.
