Ingredients for 1 servings:

  • 125 g butter
  • 90 g powdered sugar
  • 1 tsp vanilla sugar
  • 1 pinch of salt
  • 1 egg yolk
  • 250 g flour
  • 450 g sour cherries from the jar
  • ⅛ liter cream
  • ⅛ liter milk
  • 50 g butter
  • 1 egg(s)
  • 1 egg yolk
  • 20 g cornstarch
  • 1 pinch of salt
  • 2 tsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 35 minutes; Total time approx. 3 hours 5 minutes

Mix the softened butter with the sifted powdered sugar, vanilla sugar, salt, and egg yolk. Sift over the flour and knead everything into a dough. Wrap the dough in aluminum foil and let it rest in the refrigerator for 2 hours. Preheat the oven to 200 degrees Celsius. Roll out the dough thinly and line 12 tartlet cases. Bake the bases on the middle rack for 10 minutes. Remove from the oven, but leave in the tin. Drain the cherries and top the tartlets with them. Mix the cream, milk, butter, egg, egg yolk, cornstarch, salt, and sugar in a saucepan and bring to a boil while stirring. Spread the cream over the cherries and bake the tartlets for another 20-25 minutes on the second rack from the bottom. Let the tartlets cool slightly in the cases, then place them on a wire rack and let them cool completely.
