Peach Soup
The perfect peach soup recipe with a picture and simple step-by-step instructions.
- 200 g Onions
- 150 g Carrots
- 1 Pc. Cilli pepper
- 100 g Butter
- 15 g Fresh thyme
- 15 g Rosemary
- 250 ml White wine
- 300 g Chicken or vegetable broth
- 250 g Peach fresh or canned
- 160 g Peach stock
- 4 cl Peach liqueur
- 300 gr Cream
- Roughly chop the onions and carrots with the chilli and sauté them in the melted butter, add the (peeled) coarsely chopped peaches, vegetables, thyme and rosemary. Add peach juice, chicken stock and white wine. And let everything simmer for about 20 minutes. Puree everything very finely and pass through a sieve. Season to taste with salt and pepper, preferably from the mill. Add the cream and peach liqueur. Bring it to the boil and enjoy your meal. Tastes very good with fried prawns and a drop of pumpkin seed oil with the topping.
