Ingredients for 1 servings:
- 100 g butter, soft
- 125 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 2 eggs
- 130 g yogurt
- 50 g hazelnuts, ground
- 25 g ground almonds
- 175 g flour
- 1 tsp baking powder
- 2 peaches (approx. 100g each without stone)
- 2 tbsp orange juice
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Fine and very moist cake
Preheat oven to 180-190°C (top and bottom heat) and line a 25cm cake tin with baking paper. Wash, halve, pit, and dice the peaches, and immediately toss with the orange juice. Beat soft butter until peaks form, add sugar, vanilla sugar, and salt, and mix. Add the eggs and beat with a hand mixer until the mixture is light and fluffy. Add the yogurt and nuts and mix. Mix the flour with the baking powder and add to the mixture. Add the peach pieces, stirring until the ingredients are well combined. Pour the batter into the tin and bake in the oven for 50-60 minutes. Do the skewer test, remove the cake from the oven, and turn it out onto a wire rack. Let it cool, and decorate with powdered sugar or glaze, if desired.
