Ingredients for 4 servings:
- 400 g rhubarb
- 1.2 liters of milk, 1.5% fat
- 100 g sugar
- 75 g raisins
- 1 vanilla pod(s)
- 400 g ribbon pasta, narrow
- 2 oranges
- Cinnamon
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Trim the rhubarb and cut into 2 cm long pieces. Bring the milk, sugar, raisins, split vanilla pod, and scraped vanilla seeds to a boil in a saucepan. Add the pasta and simmer gently for 5 minutes. Then stir in the rhubarb pieces. Simmer for another 5 minutes in a covered pan, stirring frequently to prevent the pasta from sticking. The liquid should then be almost absorbed and the pasta should be soft. Peel the oranges and remove all the white pith. Cut into quarters, then cut these crosswise into thin slices. Deseed, if desired, and mix into the pasta. Sprinkle with a little more cinnamon to taste.
