Peanut Butter Blueberry Muffins

Ingredients for 1 servings:

  • 260 g flour
  • 2 tsp baking powder
  • 100 g cornstarch
  • ½ tsp baking soda
  • 50 g butter, soft
  • 100 g peanut butter
  • 2 eggs
  • 140 ml milk
  • 100 g sugar
  • 200 g blueberries
  • Grease for the mold or paper baking cups

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (conventional heat). Prepare a muffin tin (grease it or use paper or silicone baking cups). If you don’t have a muffin tin, simply stack two paper baking cups inside each other. Mix the flour, baking powder, cornstarch, and baking soda in a bowl. In another bowl, combine the softened butter with the softened peanut butter. Add the sugar and eggs and continue mixing. Finally, stir in the milk. Pour the liquid mixture completely into the flour and mix everything well. The batter should be relatively firm. Finally, carefully (!) fold in the berries. Spoon a good tablespoon of batter into each pan and place the pan in the oven. Bake for approximately 20-25 minutes (test with a toothpick).
