Peanut Butter Cookies

Ingredients for 1 servings:

  • 40 g butter or margarine
  • 70 g peanut butter, with or without pieces
  • 50 g brown sugar
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 140 g flour
  • ½ tsp baking soda
  • 1 pinch of salt
  • 100 g peanuts, roasted, salted

Working time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 38 minutes

Cookies with peanut butter and peanut pieces

Preheat the oven to 180°C (top and bottom heat). Cream the butter/margarine, peanut butter, both sugars, and vanilla sugar until light and fluffy. Add the egg and beat everything for at least 1 minute until creamy. Mix the flour with the baking soda, sift it in, and knead everything into a smooth, sticky dough. Roughly chop the peanuts and knead in. Form the dough into balls with a diameter of 1.5 to 2 cm, place them on a baking sheet lined with baking paper, and flatten them with the palm of your hand or a fork. Leave enough space between them, as the cookies will spread during baking. I put a maximum of 8 dough balls on a baking sheet. Bake for 8 minutes, until the edges are lightly browned. After baking, let the cookies cool on the baking sheet for a few minutes until they are firm enough to transfer to a wire rack to cool further. The cookies have a wonderfully peanutty flavor and are super crispy.
