Peanut butter cookies

Ingredients for 1 servings:

  • 400 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 100 g butter
  • 100 g margarine
  • 125 g brown sugar
  • 200 g white sugar
  • 2 eggs
  • 250 g peanut butter, room temperature
  • 100 g peanuts, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 175 degrees Celsius. Sift flour, baking powder, and baking soda into a bowl and mix in salt. Set aside. In a large bowl, beat the butter, shortening, and all of the sugar with an electric mixer on medium speed until light and fluffy. Add the eggs, one at a time, beating well each time, then fold in the peanut butter. Fold in the chopped peanuts, then add the flour mixture a little at a time and mix well. Form the dough into 2-3 cm balls and place them 4-5 cm apart on an ungreased baking sheet. Flatten each ball twice with a fork to create a checkered pattern and to a thickness of about 0.5 cm. Bake in the center of the oven for 20 minutes until golden brown, then let cool on a wire rack.
