Ingredients for 1 servings:
- 100 g oat flakes
- 150 g flour
- 1 packet of baking powder
- 2 eggs
- 150 ml milk, optionally oat milk (oat drink)
- 3 tsp peanut butter, optional peanut butter
- 50 ml sunflower oil
- 1 tsp vanilla extract
- 1 tbsp date syrup or honey, more if desired
- 50 g dark chocolate, min. 85%

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Combine the oats, flour, and baking powder. Add the eggs, milk, peanut butter, and oil and mix to form a batter. Stir in the vanilla extract and date syrup or honey. Chop the dark chocolate into pieces. Reserve 1/3 of the mixture and stir in the rest. Spoon the batter into 12 muffin cups and sprinkle the remaining chocolate pieces on top. Bake the muffins for 15-20 minutes. They taste great warm with ice cream or as a relatively healthy snack.
