Peanut muffins with dark chocolate

Ingredients for 1 servings:

  • 100 g oat flakes
  • 150 g flour
  • 1 packet of baking powder
  • 2 eggs
  • 150 ml milk, optionally oat milk (oat drink)
  • 3 tsp peanut butter, optional peanut butter
  • 50 ml sunflower oil
  • 1 tsp vanilla extract
  • 1 tbsp date syrup or honey, more if desired
  • 50 g dark chocolate, min. 85%

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Combine the oats, flour, and baking powder. Add the eggs, milk, peanut butter, and oil and mix to form a batter. Stir in the vanilla extract and date syrup or honey. Chop the dark chocolate into pieces. Reserve 1/3 of the mixture and stir in the rest. Spoon the batter into 12 muffin cups and sprinkle the remaining chocolate pieces on top. Bake the muffins for 15-20 minutes. They taste great warm with ice cream or as a relatively healthy snack.
