Peanut sauce

Ingredients for 4 servings:

  • 1 onion(s), finely diced
  • 1 garlic clove(s), finely chopped
  • 2 tsp ginger paste
  • Oil for frying, e.g. coconut oil or sesame oil
  • 120 g peanut butter, creamy or crunchy
  • 250 ml water
  • 50 ml soy sauce, more if needed
  • 1 lime(s), juice and zest
  • 100 ml cream or reduced-fat Cremefine
  • Cayenne pepper
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Sauté the onion and garlic pieces in hot oil, add the ginger paste, stir, and deglaze with water. Bring to a boil. Melt the peanut butter, add the soy sauce and cream or Creme Fine, and bring to a comfortable serving temperature. Season with lime juice and zest, cayenne pepper, salt, pepper, and more soy sauce, if desired. It’s delicious as a side dish to Asian dishes with roasted duck or chicken breast, but also without meat, just with rice and vegetables. The sauce can also be made vegan using vegan whipped cream or Creme Vega instead of cream.
