absolutely delicious with cheese

You’ll need two 3-dl jam jars. Bring pears, shallots, lemon juice, white wine, water, and sugar to a boil. Simmer for 15 minutes, stirring frequently. Add the bacon-wrapped pears, prunes, nuts, and gelling sugar, and simmer for another 3-4 minutes. Stir in the mustard and pepper. Pour the mixture while still boiling hot into clean, preheated jars, seal immediately, and briefly turn upside down. Store in a cool, dark place. Delicious with fresh bread, cheese, and white wine.
