Pear, Chocolate and Red Wine Cake

Ingredients
 

  • 400 g Pears, weighed whole
  • 2 tbsp Lemon juice
  • 85 g Dark chocolate shavings
  • 200 g Butter or margarine
  • 200 g Sugar
  • 1 pinch Salt
  • 1 tsp Ginger bread spice
  • 4 Pc. Eggs
  • 250 g Flour
  • 2 tbsp Cocoa powder, if you like it very chocolatey, take 3 tbsp
  • 3 tsp Baking powder
  • 125 ml Red wine
  • 150 g Chocolate couverture

Instructions
 

  • Peel the pears, remove the core and cut into approx. 1 cm cubes. Put in a bowl and drizzle with lemon juice so they don't turn brown.
  • Mix the butter, sugar, salt, eggs and gingerbread spice for a few minutes until frothy. Mix the flour, cocoa powder and baking powder and mix in briefly on a low level, alternating with the red wine. At the end, carefully fold in the pear cubes and chocolate flakes.
  • Fill the dough into a prepared loaf pan and bake in the preheated oven on the middle rack at 175 degrees (or fan oven 150 degrees) for about 60 - 65 minutes.
  • When the cake is through, take it out and let it cool down in the tin for about 10 minutes, then turn it out of the tin and let it cool down. Melt the chocolate couverture in a water bath and use it to glaze the cake.
