Red Wine, Pistachio and Chocolate Cookies

Ingredients
 

to prepare:

  • 50 g Dark chocolate, 60% cocoa
  • 50 g Pine nuts

for the batter:

  • 120 g Butter
  • 120 g Brown sugar
  • 1 Egg
  • 100 g Flour
  • 50 g Food starch
  • 1 tsp Baking powder
  • 3 tbsp Red wine
  • 40 g Chopped pistachio nuts

for the cast:

  • 100 g Powdered sugar
  • 2 tbsp Red wine

Instructions
 

  • To prepare, chop the chocolate into small pieces and roast the pine nuts in a pan until golden brown.
  • For the dough, stir the butter with the hand mixer (whisk) on the highest level until smooth, gradually stirring in the sugar. Stir in the egg for about 1/2 minute.
  • Mix the flour, cornstarch and baking powder and stir in two portions alternately with the red wine under the butter and egg mixture. Finally fold in the pine nuts, chopped chocolate and pistachios.
  • Place the dough with two teaspoons in small piles with a little space next to each other on two baking sheets lined with baking paper and bake one after the other in the preheated oven at 200 degrees. (With 180 degrees circulating air, the trays can also be baked at the same time). Time: 12-15 minutes
  • Let the biscuits cool on a wire rack, then use the icing made from powdered sugar and red wine (should be thick) to put a blob in the middle of each biscuit.
