Pear compote with mint

Ingredients for 3 servings:

  • 6 pears, ripe, approx. 1 kg
  • 300 g sugar
  • 60 ml lemon juice
  • 1 lemon(s), organic, peel
  • 6 tea bags (peppermint)
  • 12 fresh mint leaves, max. 12 small leaves
  • 600 ml water, boiling

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Pour boiling water over the tea bags and let them steep for 5 minutes. Wash, peel, and eighth the pears. Wash the lemon and slice it into thin strips. Then squeeze the lemon. Boil everything – peppermint tea, lemon juice, sugar, and zest – along with the pear pieces in a saucepan until soft but still firm to the bite. (This can take up to 20 minutes depending on the pear variety and ripeness.) At the end of the cooking time, you can add a few striped mint leaves. I fill the compote into twist-off jars with hot liquid and wait a week before opening one; then it’s nicely steeped.
