Separate the eggs. Beat the egg yolks with vanilla and 4 tablespoons of powdered sugar, lemon zest, rum flavoring, and cinnamon until thick and foamy. Stir in the quark and cornstarch. Beat the egg whites until stiff and carefully fold in. Grease a large, shallow baking dish and add the quark mixture. Peel and core the pears, and cut into wedges. Spread them fan-shaped over the quark mixture, pressing in lightly. Drizzle with lemon juice and sprinkle with pistachios. Bake in a preheated oven (200-225°C) for approx. 15-20 minutes. Dust with the remaining powdered sugar. Can be eaten hot or cold.
