Pear pancake

Ingredients for 2 servings:

  • 2 small pears, not too ripe
  • 3 eggs, size L, separated
  • 100 g flour
  • 4 tbsp sugar
  • 1 packet of vanilla sugar
  • 100 ml milk
  • 4 tbsp butter
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Sift the flour and whisk well with the milk, vanilla sugar, egg yolks, and salt. Then beat the egg whites with 2 tablespoons of granulated sugar until stiff peaks form and carefully fold into the batter. Heat the butter in an ovenproof (preferably non-stick) pan. Spread 1 tablespoon of sugar in the pan, melt briefly in the butter, and then pour in the egg mixture. Sprinkle the peeled and diced pears on top. Bake in a preheated oven at 150°C (fan oven) on the middle rack for about 15 minutes. Remove from the oven, cut in half, and turn the halves over. Carefully tear the pears into small pieces using two spoons and continue to cook over low heat. Transfer to a platter, sprinkle with powdered sugar, and serve with cranberries.
