Sheila's Peach Pudding

Ingredients for 4 servings:

  • 125 g flour
  • 125 g butter, soft
  • 75 g powdered sugar
  • 3 eggs, size M
  • ½ tsp baking powder
  • 1 vanilla pod(s), including the pulp
  • 3 m.-sized peach(s) or 1 can peaches

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

English dessert

Preheat the oven to 175°C (top/bottom heat). Grease and flour a baking dish. Wash and peel the peaches, halve them, and cut them into wedges. If using canned peaches, drain them well. Cream the butter with the sugar and vanilla seeds. Beat in the eggs until light and fluffy. Mix the flour and baking powder and stir in. Place the peaches in the prepared dish and cover with the batter. Place in the oven. After about 35 minutes (if the peaches are very juicy and large, it can take up to 45 minutes, but cover with aluminum foil!), this delicious English dessert is ready. Do the skewer test! Serve warm, dusted with powdered sugar. It goes very well with a scoop of vanilla ice cream and some fresh, runny cream. We eat the peach pudding as a sweet main course, so the mixture makes about 3 servings.
