Grandma’s basic recipe, simple and good
Boil the jars and seals/lids for 5-10 minutes. Heat the water, sugar, vanilla sugar or vanilla pod together in a saucepan until the sugar has completely dissolved. Quarter the pears lengthwise and remove the cores. Save the stems. Fill the jars with pear slices and fill with the sugar water (if using a vanilla pod, please remove it from the sugar water first!) until a thumb’s width below the rim. Seal tightly. Boil in a preserving pan or saucepan with a preserving thermometer for 30 minutes at 90°C. Allow to cool in the pan. If the stem is included in the jar, the pears will stay light-colored. Without the stem, the pears will discolor and become slightly darker.
