Penne with rosemary

Ingredients for 4 servings:

  • 400g penne
  • 1 sprig(s) rosemary
  • 80 g pistachios, shelled
  • 100 g bacon, streaky smoked
  • 10 g fennel seeds
  • 6 tbsp olive oil, very good
  • 80 g Parmesan, freshly grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Italian pasta dish

Cook the penne in salted water until al dente. Finely chop the rosemary, pistachios, and bacon, and crush the fennel seeds in a mortar. Heat everything together in a wide pan with olive oil, stirring well. Once a fine sauce has formed, add the penne. Stir in the Parmesan cheese and season with freshly ground black pepper. Return to the heat, season to taste, and stir well. Serve immediately in a deep bowl.
