Ingredients for 4 servings:

  • 1 onion(s), diced
  • 2 cloves garlic, diced
  • 1 chili pepper(s), cut into strips
  • 1 fresh sausage, skinned and sliced
  • ½ jar red wine
  • 600 g tomatoes, chopped from the can
  • 1 pinch(s) of sugar
  • 6 black olives, sliced
  • 1 pinch(s) oregano, dried
  • 500g penne
  • olive oil
  • Salt, preferably fleur de sel
  • Pepper, mixed, freshly ground
  • Parmesan

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Pasta with Italian sausage

Remove the skin from the sliced ​​sausage and fry in a little olive oil until almost cooked through. Use little oil, as the sausage releases its own fat. Sauté the onion, garlic, and chili in the remaining frying fat until translucent. Then briefly toss in the olives and deglaze with the red wine. Be sure to simmer for about 4 minutes; the alcohol needs to evaporate, so this dish is also suitable for children. Then add the tomatoes and a pinch of sugar (neutralizes the acidity of the tomatoes), along with a pinch of oregano, salt, and ground pepper. The sauce needs to simmer for at least 20 minutes, depending on the desired consistency. Just before the end of the cooking time, add the sausage again and let it infuse thoroughly. Meanwhile, cook the penne al dente. Drain the pasta, then immediately add it to the sauce and mix. Sprinkle with Parmesan cheese, serve on a plate, and enjoy with a glass of red wine.
