People Need Good Soup
The perfect people need good soup recipe with a picture and simple step-by-step instructions.
- 2 big Meat bones – beef
- Root vegetables – carrots, parsley root, celery
- Leek etc.
- Parsely
- 1 Onion
- Garlic clove unpeeled, bumped
- Bay leaf
- Peppercorns
- Grated nutmeg
- Salt
- Black pepper from the mill
- Oil
- Wash the meat bones and dab with paper towels. Let the oil get hot in a slightly larger saucepan. Roast the meat bones with the onion cut in half and the pressed garlic (both with the skin give a nice color) until they take on a little color.
- Add about 2 liters and simmer the cleaned, washed, coarsely chopped root vegetables with the leek and a few stalks of parsley, bay leaf, peppercorns on a low flame for about two hours (skim off the foam that has formed). I rub nutmeg just before the end.
- Strain the soup in a fine sieve (or ideally through a clean tea towel). I always cut the vegetables and meat off the bones and add them to the soup, possibly adding salt and pepper to taste. Serve sprinkled with parsley or chives.
- Tip 4: As an insert, soup noodle, semolina dumplings or liver dumplings.
