Pepper salad with feta cheese

Ingredients for 6 servings:

  • 6 bell peppers, mixed
  • 2 onions
  • 200 g sheep’s cheese
  • 2 lemons
  • 5 tbsp olive oil
  • 1 tsp oregano
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Wash the peppers, remove the seeds and ribs, and cut into thin strips. Peel the onions, halve them, and slice them into thin rings. Dice the feta cheese and add it to the peppers along with the onions. Squeeze the lemons, mix the juice with the olive oil, and season with oregano, salt, and pepper. Pour over the salad and toss everything gently. Refrigerate for at least 3 hours. Mix and season to taste before serving. If the sauce is too lemony for you, add a little more olive oil.
