Peppered Zucchini in Tomato Bed

The perfect peppered zucchini in tomato bed recipe with a picture and simple step-by-step instructions.

  • 1 Medium zucchini
  • 100 g Gouda cheese
  • 80 g Pork belly
  • 6 Tomatoes
  • 1 Onion
  • 1 Peeled garlic clove
  • Salt, pepper, chilli
  • Salt, vinegar
  • 1 Small zucchini
  1. Wash the zucchini and cut across at intervals of approx. 5 cm, do not cut. Cut the cheese and pork belly in the zucchini and place them alternately in the wedges. (Pressing in with a knife will help). Place in a baking dish. Lightly salt and pepper on top. Dice tomatoes, small zucchini, onions and garlic. Season well with salt, pepper and a little chilli. Add 2 tablespoons of oil and 1/2 tablespoon of vinegar and season to taste if necessary.
  2. Spread the tomatoes around the zucchini and cook in the oven at 180 degrees for about 35 – 40 minutes. (Depends on the size of the zucchini). Finally, gratinate for 5 minutes under the grill.
