Peppermint and Peas Con Anima

- 750 g Green frozen peas
- 2 tbsp Sugar
- 10 piece Mint stalk
- 1 piece Clove of garlic
- 500 ml Poultry broth
- 250 g Sour cream
- 1 Splash Lemon
- 200 ml Milk
- 1 bunch Chives
- Heat the peas, sugar and mint without water, stirring constantly, over a low heat until the peas are soft. Add lemon juice and cream and puree with a stirring stick until a smooth mixture is formed.
- Add the chicken stock and milk until it has the desired consistency of a soup. Then bring to the boil and refrigerate (preferably later in the refrigerator).
