Peppermint – Lemon Balm – Tea

Ingredients for 2 servings:

  • 2 handfuls of lemon balm, fresh with stem
  • 1 handful of peppermint, fresh with stem
  • 1 liter of water, hot
  • 1 tsp sugar, brown or white

Place the lemon balm and mint leaves, stems included, into a teapot. You can also use kitchen scissors to cut them into small pieces about the size of a finger. Don’t chop, or the essential oils will evaporate. Add the sugar (you can also omit it) and pour over the hot (at most simmering, not boiling!) water. Then cover and let it steep. After about 20 minutes, a very refreshing lemony-minty flavor will have developed; the longer the brew stands, the more intense the flavor becomes. You don’t have to remove the herbs, but I usually pour them through a sieve into bottles and chill the tea. It’s great after exercise! If you like, you can use just lemon balm or adjust the quantities. My mother always made it this way.
